Slow Cooker Mediterranean Chicken

This Slow Cooker Mediterranean Chicken is one of my go-to meals when I want something nourishing, flavorful, and hands-off. Packed with protein, healthy fats, and antioxidant-rich herbs and greens, it’s a balanced dish that feels both comforting and fresh. I love it because it’s endlessly adaptable—you can use whatever veggies you have on hand, and the slow cooker does all the work while filling your kitchen with the most amazing aroma.

Beyond the convenience, this recipe brings all the wellness perks of a Mediterranean-style diet: heart-healthy olive oil, gut-friendly fiber from veggies, and herbs that support digestion and immune health. It’s simple, delicious, and a client favorite when they’re looking for an easy weeknight dinner that tastes gourmet without the effort.

Here is my spin on this flavorful dish:

Ingredients:

  • 1 tbsp olive oil
  • 2 lbs boneless skinless chicken thighs
  • 1 sweet onion, sliced thin
  • 3 garlic cloves, minced
  • 1 cup chopped green veggies (spinach, kale, or broccoli rabe)
  • 1-2 cups chopped veggies of choice (eggplant, zucchini, sweet potato, etc)
  • ½ cup chicken broth or water
  • 1 tsp oregano
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 cup diced tomatoes or 1 small can tomato sauce (optional)
  • ½  cup olives (optional)
  • 1 Tbsp capers (optional)
  • 1 lime, juiced (for serving)

Directions:

  1. Heat olive oil in a skillet and sear chicken thighs for 2–3 minutes per side until lightly browned (optional, for extra flavor).
  2. Place chicken into the slow cooker with vegetables (except greens) and broth.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
  4. About 30 minutes before serving, stir in your greens, herbs and spices (so they stay vibrant and not overcooked).
  5. Season to taste, remove bay leaf, and finish with a squeeze of fresh lime before serving.

Pro Tip: Serve over quinoa, brown rice, or cauliflower rice to soak up the flavorful juices.
