With coconut water for hydration and a touch of natural sweetness, this recipe is light, cooling, and nourishing. Inspired by @bearenger, it’s a simple, guilt-free snack I love to keep in the fridge—perfect for an afternoon pick-me-up or a calming evening bite.

Ingredients:

  • ½ cup pure tart cherry juice (for a stronger flavor; swap with pomegranate or cranberry if desired)
  • 1 cup hot hibiscus tea (brewed strong and strained, from petals or powder)
  • 2 Tbsp fresh lime juice (brightens and balances)
  • 1–2 Tbsp raw honey or maple syrup (adjust to taste)
  • 3 Tbsp grass-fed gelatin powder (or 4 tsp agar agar for a vegan option)
  • ¾ cup coconut water (adds natural electrolytes)
  • Optional: pinch of sea salt + zest of ½ lime for depth

Directions:

  1. In a heat-safe bowl, whisk together hot hibiscus tea and gelatin powder until dissolved.
  2. Stir in tart cherry juice, lime juice, honey, and optional sea salt/zest.
  3. Slowly add coconut water, mixing well.
  4. Pour into a glass or stainless container (or silicone molds for fun shapes).
  5. Refrigerate for at least 4 hours, or overnight, until firm.
  6. Cut into cubes or unmold, and enjoy chilled!

Pro tip: Top with fresh berries, coconut flakes, or a dollop of coconut yogurt for a pretty presentation and extra nutrients.
